The granary, also called a canastro in this region, is a structure usually made of stone and wood, with the function of drying the thick maize through the lateral cracks, and at the same time preventing it from being destroyed by rodents because it is on an elevated level. As the maize needs to be harvested in autumn, it needs to be as airy as possible to dry in a season as harsh as winter.
